You can try some of our probiotic menus and products on our Chef's Table.
There are so many fermented food ingredients that we can make with our LACTOCULTURE, However it's not easy to imagine the taste or dishes with them. 
So you can visit us and experience the great taste of probiotic menus first with us.

We carefully select each ingredient, ferment and cure them with microorganisms, cook it carefully, and pursue our own unique probiotic cuisine.  We hope you will find a glimpse of the depth and charm of fermented foods.

Concept & Features
 
The features of our chef’s table are “Probiotics, Prebiotics and Umami”. We pursue "deliciousness" and "health" at the same time using our new fermentation technology LACTOCULTURE. 
In our menu we use various prebiotic ingredients such as vegetables, mushrooms, seaweeds. They are rich in fiber and activate the action of microorganisms in our intestine. We also make full use of probiotic ingredients fermented with lactic acid bacteria, koji, yeast, natto bacteria, and acetic acid bacteria. They produce plenty amount of Umami in the food.

Step 1: Choose from 2 courses for all persons

Toro Tuna, Hamachi, River Prawn, Lobster, Black Cod, Wagyu beef, etc please request when you book. 

 

Course Menu : 1500-2000B

-Welcome Drink

-Rice or Bread/Pasta

9 Course Omakase Menu : 2000-2500B

-Welcome Drink

Step 2: Drink : Choose type of drink for individual, 3~4 glasses during meal

-Probiotics & Soft Drink : 300B

Probiotic lemonade, Probiotic Craft Soda, teas(Houji-cha or Barley tea, etc), freshly grind drip Coffee(Thai single origin)

-Alcohol & Soft Drink : 500B 

Home made fruits Wine( Strawberry, Mixed Berries, Tropical Mixed Fruits), Mead(Honey Wines)

 

Step 3 : Choose Rice Menu or Bread/Pasta Menu

-Rice Menu is based on Japanese & Asian foods

-Bread/Pasta Menu is based on Western foods

 

Step 4 : Food Restrictions 

If you have any food restrictions, please let us know when you book.

-Vegetarians (no meat, no fish)

-Daily Products(No milk, no cheese)

This orientation & tasting event is an introduction of LACTOCULTURE, to the unknown universe of invisible microbes.You will be able to hear, see, smell, feel and taste some of the results of LACTOCULTURE, and fascinated with the benefits and infinite potential of microbial universe.

Price & Conditions​
The probiotics LACTO can be utilized for improving and maintaining the health condition of animals and plants including human being by adjusting the balance of microbes.  

Booking : 

-Minimum 4 persons Maximum 8 persons

-One week before, confirm by payment

 

Schedule : 

-On your request (till December 2020)

-Start from 12noon for lunch or 6pm for dinner

-2~3hours 6-9 courses

It can be used not only for the improvement of living environment but also gardening or agriculture purposes such as soil improvement, water treatment, and supplying essential nutrients.
Disinfection / Anti-bacterial Effect
LACTO contains a lot of antimicrobial substances & active elements (to harmful microbes) produced by lactic acid fermentation.
Deodorant
Lactic acid in LACTO can neutralize ammonia and hydrogen sulfide, which cause offensive odor, and it can improve the malodor. it also has the effect of suppressing breeding of harmful microbes and improving the cause of malodors. 
Composting / Agriculture
LACTO is not only harmony of lactic acid bacteria and other beneficial microbes, but also rich in nutrients such as botanical hormones and various enzymes indispensable for cultivation of plants. It also chelates nutrients during the fermentation process and can supply these nutrients in a more absorbable form for plants.
